When I dreamed of Galerias on Broadway, my intentions were to introduce my guests to authentic Mexican cuisine to be enjoyed in an environment that did not reflect the predictable style of sombreros and ponchos. Instead, I hoped for a style that is timeless, ranging from the sixteenth to the twenty-first centuries. Galerias is a celebration of everything Mexican throughout the many states of Mexico. The dishes I have created in Galerias and have brought to you represent many different cultures of Mexico. The flavors come from a collection of new and old recipes. My mother and I created this menu to introduce a wide variety of chilies, seeds, and Mexican flavors to our guests. Many believe that the chili has special powers which bring strength and energy to those who enjoy them!
