Executive Chef Peter Levine has created a menu featuring fresh seafood preparations with a hint of nostalgia. Fresh daily selections of fish and 28-Day Dry-Aged Certified Angus Beef® Steaks are prepared on an open-pit charcoal grill in the exhibition kitchen. The Emerald City Volcano provides a fiery climax to an extraordinary evening of culinary delight and intelligent service orchestrated by General Manager Sivi Mennen.
AQUA by El Gaucho showcases the dinner-as-theatre philosophy and signature hospitality made famous by veteran Seattle restaurateur Paul Mackay.
